Scripts can change the title, but not like that, and I don't think there would be a good way to put the clipboard text into the title (there is no script event when the clipboard changes, so it would not automatically update).

If you click the help button in the Preferences window, it will show you a list of % codes which can be used in the title to display various things such as the current folder.
