I have field colors disabled in all my dopus prefs but
when I open a "special" dir (ex: recycle bin, control panel,...) in dopus, field colors are used...
=> Where do I change/disable it ?

Like we told you in IRC - you can't.
The system provides the display for namespace folders.
Opus does some trickery to show backdrop images in theses folders though.
