How do I stop Opus adding folders automatically to the QUICK ACCESS list? I can add the ones I need, not have Opus do it for me.

Do you mean SmartFavorites rather than Quick Access? Opus shouldn't modify the Quick Access list at all by itself.
You can turn off SmartFavorites under Preferences / Favorites and Recent / SmartFavorites. Try that and see if the entries go away.
Well, Quick Access is where I am seeing the folders added, in fact I don't see a SmartFaves listed BUT I have turned it off anyway and will see where that takes me.

Quick Access is a Windows feature, if you want to stop things being added to it automatically you need to configure it through Windows.
That was my next thought... especially when I could find no reference to QA in Opus.
