Why can not I hide the file extensions?
can i turn it off with one setting or option

You can do that. In > Tools > Folder Options > Display (second tab from the left), there is an option at the top of that page to hide the extensions. I think it's possible to hide them for a whole drive, if you start in the root directory, saving the setting for all subfolders. I would recommend to keep a backup of your previous settings.
