When I open an new folder or refresh an existing folder, the arrow that appears next to the column I have sorted, for example, the Size column, will briefly turn red, perhaps to indicate that it is loading.

It turns red to tell you the sort isn't finished because the information it depends on hasn't finished calculating. It's useful and shouldn't be turned off.
The thing is that I'm working a lot in a folder with 100+ GB of subfolders and red typically means 'error' not 'loading'... (that's usually what spin wheels are for) so it takes away my attention for a bit / can be a bit distracting.
You can change the color here:
Preferences / Colors and Fonts / Windows Colors / [Visual Styles] Headers: Sort arrows
It also doesn't happen if you sort by Name, which is the usual thing to sort by, since that doesn't require time to calculate. (Or sort by Size without turning on automatic folder-size calculation, which is the slower part. Using Everything can make that much faster, too, on local drives.)
