How do I show drive letters as well as drive names?
Show where? The folder tree (Preferences / Folder Tree / Appearance), file display (Preferences / Folders / Virtual Folders), drive buttons on toolbars (edit the button)...?

I want Drive letters & Drive names in Folder Tree.
No option to enable this in:
Preferences / Folder Tree / Appearance.
Nor anywhere else I that I can find.
Did that - no names though.
Atttached, a screen shot of Drive M in the Folder Tree,
with name of OFFSITE showing in M's properties. Yet only M shows in DO.
What does the Preferences window look like?
Also, if you click on This PC, are labels shown in the file display, or also blank there?
You have selected the option to show drives as "C:", which is why you're only seeing the letters.
Try either of the other options above or below that one, at the top of that Preferences screen.

There wouldn't be an option to remove the (Local Disc) for drive C would there?
the name for drive C is blank (nothing)
Don't think so. We most likely display whatever Windows reports the label as being. File Explorer also displays "Local Disk" for a local drive whose label is set to a blank string.
You might be able to set it to a space or something, or you could set it to "C" like you've done for your D, E and Z drives.
Used a space. Looks crap, but no other alternative.
