Now, if a word document is modified today, its display is blue. And I want it to be orange.

Re-create the wildcard inside a filter (so it's the same type of label as the Modified 24 Hours one), and turn off "View by label" in the Preferences dialog. You can then move the filters up and down relative to each other to set their priorities.
