You can edit the filter field while in customize mode and assign any key you want to it.
However, in Opus 10 the filter field isn't used at all by default (you still can if you want to) and instead there is a new filter bar that appears below the file display when you push the * key. (You can change the key via Preferences / File Displays / Filter Bar.)
You can create a hotkey which clears either/both of the filters if you want. The exact command may depend on the filter type you decide to use. That said, if you use the filter bar then you can just type * and then backspace to clear the filter without creating an additional hotkey.
