When I add a new folder to favorites (Ctrl-D), I'd like to specify a hotkey letter by prefixing it with the & char (ampersand),
so I can open the folder with Alt-A, H combination.
But the saved favorite name will now have two ampersand chars in it.
For example: I add a favorite named "home" and I enter "&home" in the name field.
Then I open favorites (Alt-A), and I see "&home" instead of "home".
If I go to Edit Favorites, I see that the name of the newly added entry is "&&home".
I'd expect only one ampersand (the one I typed).
Of course I can edit the name and remove the extra ampersand, but I shouldn't have to do that.
And then all the people who just want an ampersand in their title without it turning into an accelerator will complain that they shouldn't have to edit the name to double them up.

Not quite. Those users that want an ampersand in the menu item name would still be able to type two underscores. And users like I that just want a hotkey (I believe much more common case with menu names) would be able to get what they want too. With current behavior (replacing one ampersand with two) we must go to Edit Favorites to edit the name to add the hotkey.
Another way to see the problem is that currently the "Add to Favorites" and "Edit Favorites" behave differently. How do we users benefit from that? I think those two edits should be consistent.
You're assuming everyone knows the significance of an ampersand, and would automatically know to type two. You only have to read this forum for a while to realise that's not the case.
How often do you create Favorites with hotkeys anyway?
I think you underestimate the computer knowledge and skills of dOpus users. We choose dOpus because it is the most powerful and customizable (and rock-solid too) File Explorer replacement available. Those computer users that don't know how to use menus with a keyboard are probably still using Windows File Explorer.
Favorites are just user-defined menus. A quick look at the menus and sub-menus (including Favorites, if any) of the programs currently running on my computer finds that almost all of them have a hotkey, but I can't find a single one with the ampersand character in it.
We've had lots of people ask why their & turned into an underline over the years. Not all Opus users are familiar with that Win32 convention.
I think using the Add to Favorites menu item is a long way on the learning curve from customizing toolbars & menus. (And when/if people do start customizing toolbars & menus, they'll probably discover what & does quite quickly by looking at the existing ones. Not so if you're an inexperienced user just trying to add a favorite.)
Maybe an alternative would be to display a bubble message about the & key if it's pushed, but that's extra work.
