How do I change the fonts in the attached image (e.g. Contacts, Desktop, Documents, etc...)?

What image format were you trying to use there?
PNG, JPG and GIF should all work.
...and that would be my problem...

How do I change the bold type? I've tried updating Settings > Display > Colors & Fonts > Fonts and this doesn't seem to be doing the trick...what am I missing?
Maybe you turned on bold for the Name or sorted column:
