How / where do I change the folder sdisplay settings so that icons will display with the actula icon and not a generic pic?

Do you mean icons for folders?
You change that icon by selecting the folder you want, then going to properties/customize/change icon
Preferences - Folders - Options - Display Generic icons for...
Easily found searching for 'icons' in the preferences dialog...
