Since i don't know what it's called...
I right-click a file in the right window. This gives us a sub-menu(?) with multiple choices, one of which is "Open With". I extend that and it opens another menu of items that usually end with "Choose Default Program...".
There is an item in that last menu i need to remove. Would someone please tell me how to find where to find those items are?

The "Open With" menu comes from Windows. Opus has little to no control over it.
NirSoft's OpenWithView utility is quite old but seems to get the job done ("Disable/Enable items in the 'Open With' dialog-box of Windows").
The Open With list is part of Windows rather than Opus.

Failing that, it may require some registry editing, since Microsoft don't provide an easy way to edit these things.

How to Remove Programs from Open with Menu in Windows 11 has fairly straightforward instructions on editing the registry directly; this is probably the same thing that the Open With View tool above will do for you.
