I've noticed that pictures viewed using the picture viewer are less saturated than pictures viewed using MS viewer or Photoshop. Is there a way to correct this in the settings?

You probably have gamma correction turned on in Preferences / Viewer / Standalone Viewer - other than that Opus doesn't perform any form of color correction on images in the viewer.
I've just checked and Gamma is turned off.

In that case whatever you're comparing it with must be saturating the images - as I said, Opus doesn't perform any color correction besides optional gamma.
