In Double Commander, I can press the space bar on a selected file or folder, while the highlight moves to the next item. I can then keep pressing the space bar, selecting then multiple files at once.
Furthermore, I can even use the arrow keys to pick what file I want to add to the selection.

Good to hear there's a similar function already, although it seems it works slightly different.
When using the Insert key, Directory Opus moves to the next file, and the selection starts from there, not from the file that was initially highlighted.
Also, it is not possible to use the arrow keys, everything would be deselected at that point.
From my understanding, the only way to use the arrow keys to pick different files that are not next to each other in the list, is to hold CTRL while using the arrow keys, and then press the Space Bar.
In the example I posted above, the only keys needed are the space bar and the arrow key.
Maybe there's a way to match Double-Commander behavior?
It'll toggle the selection of the initial file, then go to the next file.
Sounds like you want to use Power Mode, not the normal Details mode.
Then you can use the arrow keys to move to the next item without changing the selection, or Insert to toggle the current item and move to the next item.
To use power mode, first turn on Preferences / File Display Modes / Power Mode / Display Power mode toolbar buttons so the options for it aren't hidden.
