Is there anyway to single-click a tree item to just have it simply expand rather than automatically opening up/displaying in your lister? And to double-click if you actually wanted the contents to be displayed in your lister.

I don't think there is. If you want to expand a branch without also selecting it, you have to use the expand/collapse icon to the left of the label rather than double-click the label.
Oh yeah - I love those little squares but they can be quite small when it comes to faster navigating to a specific folder/file. I'll just keep an extra tab open for the tree activity. Thank you!
