Any help on being able to see missing context menu options (right mouse click on a filename) in DOpus that I can see in Windows 11 File Explorer. See screenshots of both

It's something BitDefender have done by choice. You'll need to ask them about it. (Or switch to a better antivirus, e.g. ESET NOD32.)
Re "Copy as paths", Options to copy the file paths and file names are in a similar place in the Opus menu in your screenshot, just with slightly different names
